Gazpacho, Gazpacho, Gazpacho, Gazpacho
The first time I heard about this mysterious dish was from my boyfriend after he tried my homemade salsa for the very first time. At that moment I was thinking exactly what you’re probably thinking right now; “What the hell is Gazpacho?”
The Spaniards created a miracle when they dished up this recipe. It is one of the most refreshing, bowl-lickin’, satisfying soups I have ever had! I honestly wish I knew about it earlier, but I’m sharing it with those of you who have yet to try this godly damn good soup because you must let your tastebuds run wild. Just to give you an idea it sorta’ tastes like Shrimp Cocktail (without the shrimp and with much more flavor).
The best part of it is that it is a super cheap and easy soup to make. It requires pretty much no cooking experience, so if you know how to use a knife to chop, you’re pretty much set.
It is perfect for a hot summer evening since it is a chilled soup. For those of us who live in the Southwest this will help get us through the above-record, dreadfully high temperatures we are about to see within the next few weeks.
You will also most likely look like this after you eat Gazpacho after a sweaty hot day (especially if you live in Arizona):
Ok, that might be a bit of an exaggeration but I’ll let you be the judge of that. Have this when you are feeling lazy and need a refreshing lunch.
- Tomatoes – the primary ingredient in Gazpacho is high in antioxidants, especially lycopene which can reduce osteoporosis and reduce the risks of different cancers, promotes heart health, has high source of Vitamin C, Vitamin A, Vitamin E, potassium, folic acid, and can help with weight loss by reducing inflammation and allowing our fat-burning hormones to work better.
- Garlic – called a ‘superfood’ because of its many nutrients and health benefits such as having high concentrations of antioxidants and anti-fungal, antiviral and antibacterial properties that can help fight acne, detox our bodies from heavy metals and a shit ton of other things. Garlic can also improve the health of our respiratory and circulation systems and help lower blood pressure. According to cancer.gov, increased consumption of garlic reduces the risk of a variety of different cancers. Gosh damn garlic you are just such a blessing and I can’t live without you.
- Red bell peppers – another vegetable that is high in antioxidants, vitamins and minerals.
Such bright, cheap, and healthy ingredients.
Gosh-Damn Good Gazpacho
- 4 cups tomato juice
- 5-6 medium tomatoes
- 1 cup cilantro
- 2 cucumbers
- 1/2 medium red onion
- 3 bell peppers
- 2 stalks celery
- 2 tbsp extra virgin olive oil
- 2 tbsp Vinegar
- 1 tbspn worcestershire sauce
- 1 small jalapeño, seeded and finely chopped
- 3 cloves garlic or minced garlic (about 2 tblspns)
- 1/2 tbspn sugar
- 1/2 tsp cumin
- 1/2 tsp paprika
- Lemon juice from about 1/2 lemon or to taste
- 1/2 avocado (for garnish)
- Salt and pepper to taste
- Cut the tomatoes in fourths in order to remove seeds with a spoon. Roughly chop up the tomatoes, cucumbers (seeded), bell peppers, celery, cilantro, red onion, jalapeño and garlic.
- Place the vegetables in a blender or food processor and add in tomato juice, lemon juice, olive oil, worcestershire sauce, paprika, sugar, vinegar, salt & pepper.
- Blend on high for about 10 seconds until the mixture is chunky, adjusting the seasonings to taste (salt, pepper, paprika, garlic, lemon).
- Cover and let chill for at least 2 hours or overnight to let the flavors soak in.
- Serve in cold bowls topped with slices of avocado, diced bell peppers, cucumber, and cilantro.
