What I Eat in a Day (Lazy & Cheap Vegan)

 

 

Hey there! Besides smoothies in the morning, I don’t eat the same thing everyday, but I just thought I’d share what I ate this day where I was feeling lazy. These recipes are simple, packed with nutrients, protein, and the ingredients are very cheap. I hope this gives you some ideas on how you can make some easy vegan meals at home.

When I wake up in the morning, I usually have a glass of water and some iced coffee with milk (I just forgot to film that). I always make double of whatever I eat because I cook for myself and my partner. The bean salad I usually make with just chickpeas, but I forgot to cook them the night before so I just used a can of mixed beans and it was still sooo good and refreshing. The salad made enough for four servings so we had it for lunch the next day. I usually ‘refurbish’ leftovers and it is so easy to make them even tastier than they were before — as you saw, all I did to jazz up our leftover ramen was sauté some veggies, fry tofu, and then add some fresh toppings.

– – – -WHY USE THOSE INGREDIENTS?- – – –
»In the Smoothie
•Ground Flax Seed: 3 tbsp contains 6 grams of protein, 8 grams of fiber, and is a great source of Omega-3, iron, calcium, Vitamin B6, magnesium, and other important nutrients.
•Almond/Cashew Protein Milk: 1 serving contains only 2 grams sugar, 10 grams protein, 45% calcium, 25% Vitamin D, and 8% Iron
•Peanut Butter Powder: Good source of protein, low in calories, and adds sweetness.
•Kale: Good source of dietary fiber, folate, iron, potassium, thiamin, riboflavin, vitamin B6, vitamin A, vitamin C and other important nutrients.

»For the Avocado Toast
•Dave’s Killer Bread – 21 Whole Grains and Seeds, contains no artificial ingredients, high in manganese, iron, fiber, selenium, iron and thiamin

»In the Rice Cake Snack
•Brown rice cakes: Low in calories, high in carbs to help me not be hungry in between meals. Plus they are versatile, they can either be made sweet (topped with peanut butter or fruit for example) or savory (hummus, avocado, salsa etc).
